In general I agree that Illustrator's keyboard shortcuts are too limited, especially for Scripts and Panel fly-out menus From the menu choose Window > Pathfinder and look at the shortcuts presented to the right. Then apply a F-Key to the action To make a keyboard shortcut for a Pathfinder command, you can: 1) Create an action that performs the command, and 2) Assign an F-Key to the action. A workaround would be to a create an action for the Pathfinder functions you use the most. Illustrator only has a shortcut to open the Pathfinder Window. Illustrator does not have a default shortcut for a specific Pathfinder function.
